Three Easy Steps to Make Dried Fruit in Your Dehydrator

Fruity dehydration is easily the oldest method of preserving fruits. Prior to the advancement of modern technology, people used salt to preserve foods or they simply dried them in the sun. Today we have the aid of a food dehydrator to assist us in the drying of foods.

Fruit dehydration is rather a safe method, as it basically removed the moisture content from the fruit, so that mold and bacteria are not able to thrive on it.

Ensure that the pieces of fruit do not overlap or even top at all, as this may cause some parts of the fruit to not dry completely.

Once the fruits have been placed within the dehydrator, the temperature may fall somewhat. Bring the temperature back up to 115 degrees Fahrenheit. At the beginning of the process there is little danger of scorching the fruit, however, when the fruit is nearly dry this risk increases.

Step Three:
Inspect the fruit at half hour intervals. Rotation of the trays may be necessary to achieve uniform drying; the fruit may even need to be turned. Your manual should provide you with expected drying time, but expect the entire process to take anywhere between 8-12 hours. As you reach the end of the process, check fruits for dryness. This can be done by simply removing a slice, allowing it to cool and then feeling it with your fingers. Additionally, fruit could be cut in half and the outer edges checked for beads of moisture. If moisture is present, the fruit is not adequately dried.

Fruits which have been dried in a dehydrator need to be put through an additional process, prior to them being stored. They should be loosely packed in jars, and shaken daily for approximately seven days to ensure that the remaining moisture is evenly distributed between the dried pieces.

How to Make Beef Jerky in an Oven, Or Better Yet, a Food Dehydrator

Can you make jerky in a regular home oven? Yes, a home oven can be used as a makeshift food dehydrator. Food dehydration essentially requires two basic elements; heat and air flow. These two elements work in concert to remove moisture from food. As the heat warms the food, its moisture is released and evaporated into the air. To dehydrate food in an oven, you simply place food items on the wire racks in your oven, set the heat and leave the oven door slightly ajar to let air and moisture out. You can also place a fan by the open oven door to provide some air circulation.

The basic meat preparation steps for making jerky are as follows: o Choose a lean piece of meat and trim off all the fat, connective tissue and or tendons o Slice the trimmed meat into 1/8 to 1/4 inch thick strips. The slices can be made with or against the grain. o If desired, the meat strips can be marinated with sauces and seasoned with spices, salt and pepper. o The United States Department of Agriculture (USDA) recommends that, before dehydrating, the meat strips be heated to a temperature of 160 degrees Fahrenheit (71 degrees Celsius). The USDA recommends this step to destroy any harmful bacteria that may be in the raw meat. Per the USDA, studies have shown that harmful bacteria can survive temperatures of 140 degrees Fahrenheit (60 degrees Celsius). The USDA especially recommends preheating, before dehydrating, for ground beef based jerky. o Maintain a constant drying temperature of between 130 to 140 degrees Fahrenheit (54 to 60 degrees Celsius).

Dried Fruit

Advantages of dehydrating food in an oven include: a) an easy, practical way to experiment with food dehydration and b) little to no additional investment is required, assuming an oven is already available. However, dehydrating with an oven does have its disadvantages including: a) an oven lacks air movement, which is a critical component of food dehydration and could result in improperly dehydrated food, bacteria and microbial growth and premature food spoilage, b) inefficient energy use given the oven's size and cost (it is estimated that leaving the oven door open will require the oven to work 25% to 30% harder to maintain the desired oven temperature), c) the danger inherent in leaving the oven door open while it is in use, especially if you have younger children, d) the heat emanating from the open oven door will heat the surrounding area - not so good if it is spring or summer or if you live in a warmer climate, e) some older ovens cannot set temperatures below 200 degrees Fahrenheit (93 degrees Celsius) and f) your oven will obviously be out of commission for several hours.

Food dehydrators are specifically designed to provide a constant ideal drying temperature combined with heated air that circulates via a blower or fan. Thus, the two main components in food dehydration - heat and air - are controllable via the dehydration unit. A food dehydrator's advantages include: a) a more efficient usable unit and space, b) a temperature control that can precisely maintain a constant desired drying temperature, c) a fan that circulates the air, thus removing moisture and d) a more efficient dehydration processing time.

How Much Does it Cost to Use a Food Dehydrator?

A common misconception is that it is expensive, electricity wise, to operate a food dehydrator. This is not true, even though dehydrators use electricity to operate their heating system and fans for longer periods of time, sometimes up to twelve and eighteen hours.

Food dehydrators are used to dry various foods by eliminating the water within the food. The water content of food is very high, typically between 80% to 95% for various fruits and vegetables and 50% to 75% for different meats. In order to minimize dehydration time, best dehydration practices to follow include slicing food into 1/4 inch or less strips and evenly spreading the food throughout the unit's trays in order to maximize the amount of the food's surface that is exposed to the unit's heat and air flow.

However, even following best dehydration practices, a food drying process can take multiple hours. One temptation is to try and speed up the drying time by increasing the dehydrating temperature. This is not recommended and can result in case hardened food; that is, food that is dried and hard on the outside but moist and containing water on the inside. Case hardened food will spoil due to microbial growth.

So what do typical dehydrators cost to operate? Obviously the costs depend on the state and local area that you live in, however, within the U.S., on average, running a 750 watt unit for one hour would cost about 8 cents. Cost per state, per hour, for the same 750 watt unit varies from about 5 cents on the low end in North Dakota to almost 22 cents in Hawaii.

A typical dehydrator may run for twelve hours. As an example, assuming a dehydrator user lives in the state of California, a food dehydrator calculator can be used to estimate electricity costs required to run a 750 watt food drying appliance for, say, 12 hours straight. In this case the electricity cost would be about .21. In fact, most food drying units power on and off during the drying cycle so this would be a maximum electricity cost.

If the same Californian user bought about 3.7 pounds of apples at .29 per pound and dried those apples during that 12 hour time period, the user would have about 1 pound of dried apples and the cost of the dried apples would be .77. The total operating cost for one pound of homemade dried apples would thus be about .98. This homemade cost compares favorably to a well known national brand of dried apples that was recently selling at a major grocery store chain for .79 for a 5 ounce bag or a cost per pound of .93. Savings for homemade dried apples, made with a dehydrator, versus store bought - about .00.

Review of the Excalibur Food Dehydrator

The Excalibur Model 2400 has four drying trays and has 4 square feet of drying area. The outside dimensions are 13 inches wide x 17 inches deep x 7 inches high and weighas about 16 lbs. The unit has a 4 inch fan and 220 watts of drying power. At the time if this writing, prices range from about 5-5 for the Model 2400.

The Excalibur Model 2500 has five drying trays and has 8 square feet of drying area. The outside dimensions are 17 inches wide x 19 inches deep x 9 inches high and weighs about 18 lbs. The unit has a 5 inch fan and 400 watts of drying power. At the time of this writing, prices range from about 0-0 for the Model 2500.

The Excalibur Model 2900 has nine drying trays and has 15 square feet of drying area. The outside dimensions are 17 inches wide x 19 inches deep x 13 inches high and weighs about 20 lbs. The unit has a 7 inch fan and 600 watts of drying power. At the time of this writing, prices range from about 0-5 for the Model 2900.

All three units are equipped with an adjustable thermostat and they include drying trays with screens. It is important for your food dehydrator to have an adjustable thermostat so that you can regulate the temperature inside the unit. If the temperature exceeds about 105-107 degrees Fahrenheit, the live enzymes in the food will perish and the nutritional content of the food will be depleted dramatically.

When drying liquids such as yogurt or fruit purees, optional flexible Excalibur ParaFlexx® 14x14 Teflex(TM) Sheets can be purchased to line the trays to prevent spills and allow for the dried product to easily peel from the sheets.

The units and trays are constructed of heavy-gauge black plastic, with the back and bottom of metal. The bottom of the unit has four plastic feet. The 3-prong power cord is about 2 feet long.

The front of the unit has a lift-off face that allows easy access to the trays and shelves. Trays slide easily in and out of the unit on evenly spaced grooves.

One of the unique features of the Excalibur dehydrator is that the placement of the fan is on the back of the unit. This has several advantages compared to competitive units that have the fan placed on the top or bottom of the unit. The first advantage is that the airflow within the unit can flow evenly across the trays allowing for the food on the trays to dry evenly. In practice, however, I have found that the unit has a few hot spots and it helps to rotate the trays during the drying process so that all the food dries evenly. Because the trays are easily pulled out from the front of the unit, it is very easy to rotate trays if necessary.

The second advantage is that if drips and spills occur within the unit, they fall harmlessly onto the smooth metal bottom which can be wiped clean after use. Competitive units that have the fan located on the bottom can be much more difficult to clean in the event of drips and spills.

Drying times for fruits and vegetables will vary greatly depending on the volume of food being dried, the type of food being dried, and the temperature setting of the unit. I typically use a lower temperature and let the unit run longer in order to maintain the most nutritional value of the food. I have made fruit rolls in as little as an hour or two. I've also dried a large quantity of bananas that took over 24 hours on a low setting.

Overall, the units are well constructed, are easy to clean and have good capacity. Because the trays are square, there is about 25% more capacity compared to round models that take up the same counter space. The units are quiet and efficient in their drying, and we recommend them to anyone who wants to expand their options of healthy food choices.

Banana Chips - Homemade With A Food Dehydrator

Banana chips are a great tasting, healthy snack that can be easily made with a food dehydrator. Banana chips' basic ingredients should consist of:

ripe or slightly overripe fruit if desired, lemon or lime juice

To make these chips: Peel the fruit and cut them crosswise into about 1/4 inch thick chips. Make Healthy Fruit Leather Snacks With Fresh Fruit and a Food Dehydrator

Eating fruit leathers, or fruit roll ups, is an easy, fun and delicious way to incorporate more fruit into a diet. Fruit leathers are also a great way to use fresh fruit before it spoils. Making fruit leather with a food dehydrator is easy. Here is a basic guide to quickly and easily turn fresh fruit into fruit leather!

Puree the Fruit: Use a food processor, a blender, a mixer, or lots of good old fashioned elbow grease to puree the fruit. Cut into Strips: Cut the roll ups into smaller strips and place each rolled up piece in plastic wrap.
Securely Store for Future Snacking - Store the roll ups in an airtight container. Enjoy for the next several months, if they last that long!

As I was making my shopping list, I was able to leave off quite a few items. It was a great summer for fruits and vegetables and I really took advantage of this. How to Make Fruit Rollups

I had tried this recipe using strawberries last summer but now I am being overrun with apples so I decided to give it a shot. They're wonderful. Apple fruit leathers put you in the mind of apple pie without the sugar and starch. Peel enough apples to make 2 cups and cut up into chunks. Blend the fruit until it's a smooth pureee. Add 2 teaspoons of lemon juice of 1/8 teaspoon of ascorbic acid to keep from discoloring. Add 1/4 to 1/2 cup of honey for sweetness, sprinkle with cinnamon and nutmeg and pour onto the dehydrator tray (fruit leather tray or Teflex sheets). Dry at 140 degrees for 6-8 hours. Check the product to make sure it's not soft then remove, cool, roll up, wrap in plastic and you're done!

How to Make Banana Chips

Banana chips have to be the easiest treat I've made so far. I used to save my ripened bananas and create banana nut bread for the winter months. After making a couple of loaves this year, I thought of all of the sugar that this took. No wonder the kids bounced off the walls! My Excalibur is large enough that I can cut up 17 bananas to 1/4 inch thickness, soak in 1/4 cup lemon juice for 15 seconds, lay out and dry at 150 degrees. Dry in your dehydrator at 135 degrees for 6 to 20 hours (depending on thickness of the peach slices and your dehydrator), until pliable and remove and cool. What a treat!
