Banana Cake Recipe


Every family needs a great banana cake recipe, a delicious homemade cake that can be rustled up in no time at all, filling the house with that lovely banana aroma as it bakes.

This banana cake recipe is very simple, and is a great way to make use of those odd bananas that tend to languish in the fruit bowl. Once the skins go brown and spotty, they're just perfect for a recipe like this. Ripe bananas have much more flavor, and their soft texture means they blend into the cake mixture easily.

If you have a lot of ripe bananas you could make two banana cakes and freeze one. Another alternative is to freeze some of your ripe bananas. Just pop them, unpeeled, into a freezer bag and keep them frozen until needed. The skins will turn black, but that's simply a reaction to the cold temperature. Your bananas are still fine to use, and you can mash them straight from the freezer, or leave them to thaw first.

If you want to make a banana cake but your bananas aren't fully ripe, there's a cure - peel the bananas and put them in the microwave for a few seconds to soften them. Then use them in the banana cake recipe that follows:

Banana Cake Recipe


225g (8 oz, 2 cups) self-raising (self-rising) flour

100g (4 oz, 1/2 cup) soft margarine or softened butter

175g (6 oz, 3/4 cup) caster (superfine granulated) sugar

2 beaten eggs

3 bananas, peeled

175g (6 oz, 1 cup) dried fruit (use sultanas, raisins, currants, chopped glace cherries, candied peel or a mixture)

Makes a 2lb (900g) cake


Pre-heat the oven to gas 4/180C/350F. Oil and base line a 2lb (900g) loaf pan.

Put all the ingredients except the dried fruit into a food processor and blend until well mixed.

Take the food processor bowl from the base machine, remove the processing blade and stir the dried fruit into the mixture.

Spoon the cake mix into the pan and bake for around 1 hr 20 minutes, or until a fine knife blade inserted into the cake comes out clean. Check the cake after 1 hr 10 minutes and if neccessary cover with a piece of foil to prevent the top from burning.

Leave until cool, then turn out of the tin.

This banana cake keeps well in an airtight tin for 2-3 days, or refrigerate it for up to 7 days.

For a banana nut cake, substitute chopped walnuts for some or all of the dried fruit, and scatter some over the top of the cake before baking.

Apple-Apricot Fruit Cake Passover Dessert Recipe


Ingredients for the Apple Layer:

6 medium apples sliced very thin, a mandolin or food processor may be used.
¼ Cup of dried apricots, chopped
1/4 cup Sugar
1 teaspoon Cinnamon
Mix all in a bowl, and set aside

Ingredients for the Cake batter:

3 medium or large Eggs, you will need to separate the yolks from the white and hold the whites until you are ready to whip, this is done to give the cake lift.
3/4 cup Matzo Cake Meal
3/4 cup Sugar
1/3 cup Oil
2 teaspoons Vanilla
2 teaspoons Lemon zest, fine
1/8 teaspoon of salt

Ingredients for the topping of the Cake:

1/3 cup of Walnuts, finely chopped
2 teaspoons Cinnamon
1/2 Cup of Sugar

You will toss the sliced apples in with sugar and cinnamon. You will then set apples and apricots aside. In another bowl you will combine egg yolks, sugar, vanilla, lemon zest, matzo meal and oil. You will blend all of these ingredients until smooth.

In a separate bowl you will whip the egg whites with 1/8 teaspoon of salt until stiff peaks form and a glossy sheen is seen. You will begin to add or gently fold 1/3 of the egg whites to the batter. Make sure you do this very gently if you want to get the maximum lift, you do not want the cake to be too dense. You will do this 3 times, until all egg whites are combined into the batter.

You will now take half of the batter and put it into a greased 9 inch spring form pan. You will add the apple, apricot, sugar and cinnamon mixture on top of the first layer of batter. Now you will cover the fruit mixture with the remaining batter. The batter will be thick and sticky so do the best you can to get it evenly spread. For the last step you will add the topping ingredients and sprinkle over cake batter. You will add to a preheated oven of 350 degrees and cook approximately 45 minutes to an hour depending on your oven. Remove and let cool. Serve.

How to make a Balloon fruit bowl:

A balloon makes a satisfying mould for a paper Mache bowl. Remove the balloon when the papier Mache is dry by popping it with pair of scissors. An elegant foot made from ring of cardboard gives the bowl a stable base.
To make a fruit bowl you will need balloon, wallpaper paste,   old newspaper, stiff cardboard, masking tape, acrylic paints, white paint, container for wallpaper paste,   spray varnish, scissors, pencil, ruler, fine grade sandpaper, small decorator paintbrush, paint mixing container and medium and fine artistic brushes.
Step1: blow up the balloon fully to make a firm base for the papier Mache. Tear the newspaper into 2.5 cm (1 inch) and soak into wallpaper paste. Cover the balloon in 5 layers of papier Mache leaving the area around the knot bare.
Step2: Leave the papier Mache in a warm place until it is completely dry. Using scissors burst the balloon and remove it. Trim the paper Mache bowl to the desired height.
Step3:   Cut a strip of cardboard about 13 cm wide and mark a line 5 cm from one long edge. Bend the strip into ring and secure with a masking tape. Cut 2cm inside tabs all the way around up to the marked line.
Step 4: stand the bowl upright & center the cardboard ring over it, bending the tabs towards outside. Use masking tape to attach to foot to the bowl by all the tabs.
Step:5 cover the bowl as well as foot further layer of papier Mache and leave in a warm place to dry it completely. Roll up some sheets of newspaper and twist them tightly to make ropes long enough to go around rim and foot of the bowl
Step6: using a masking tape attach the newspaper twists to the top & bottom of the foot as well to rim of the bowl. Cover with more layers of papier Mache and leave it to dry.
Step7: lightly rub down with fine grade sandpaper, then prime inside and out with 2 coats of white emulsion paint. Allow it to dry. Decorate the bowl inside as well as outside with acrylic paint and finish with coat of acrylic varnish. Leave to dry.

If you do not dry the fruit properly it will burn or the outside will dry too fast, trapping the moisture inside.

Rapid dehydration is what you are aiming for. When drying fruit outside remember humid airs slows down evaporation. Also you do not want to heat the fruit, let it cool, and reheat it. Doing this will cause bacteria and fungus. If you let the fruit cool before it is completely dry, you are better off throwing it away. Drying fruit takes time and effort. Do not expect to get it right on the first time. If you have never dried fruit before I suggest trying it first because the taste does differ from fresh fruit.
