Some individuals have always stated that some fruits, nuts or vegetables are super foods. This is a contentious topic, but it has to be the case that some foodstuffs are better for you than others, but whether it is justifiable to hype up a foodstuff for a quick sale is another issue. Blueberries are a case in point. Are blueberries a super fruit or not?

Proponents of blueberries say that they are rich in antioxidants and that they are able to improve vision and relieve eye strain; improve brain and memory functions and resist urinary tract infections (UTI's). Blueberries are said to be rich in antioxidants and anthocyanins, but what are they?

However, the same individuals will admit that to create a 5-6% improvement in motor skills would almost certainly take a daily consumption of about 100 grammes per day, which is naturally not an insignificant amount, even if you like them and cultivate them yourself.

It has also been stated that the daily consumption of blueberries reduces the level of LDL in the blood, which is popularly called 'bad cholesterol'.

Mangosteen - Queen Of Tropical Fruit

Mangosteen Fruit (Garcinia mangostana)

Garcinia is a Genus of 400 species with seven being indigenous to Australia but plants that produce edible fruits are few. The most well known in commerce is the delicious Mangosteen from Malaya and SE. Asia with peach like flowers and purplish fruits, known as "Queen of Tropical Fruit".

Mangosteen is a small and slow-growing tropical evergreen tree growing to a maximum of about 20m. The tree is a broad leafed evergreen with short columnar or pyramidal form. The large green/yellow flowers are tinged with red - about 20-30 mm in diameter occurring singly or in pairs on older branchlets. Male or hermaphrodite flowers can be found on the same tree.

Purple Mangosteen is a common fruit native to South East Asia and found in Thailand, India, Malaysia, Vietnam and the Philippines requiring very humid, equatorial climate. The flavour is sweet and melting. It has a reputation for being the most delicious tropical fruit in existence! The tree takes from 12-20 years to reach full fruiting maturity. The seeds are edible and eaten boiled or roasted.

The accumulated knowledge of centuries of ancient Asian medicine has been passed down from generation to generation and also to early European explorers and settlers. It is no wonder that recent modern scientific research seeks to verify the traditional claims of the beneficial properties of the fruit and rind when research already indicates properties in the fruit that can inhibit several types of cancer including breast cancer, liver cancer and leukemia.

Mangosteen also has anti-histamine and anti-inflammatory properties. The whole fruit has been used traditionally, as a medicinal treatment for diarrhoea, skin infection and wounds throughout South East Asia.

One of the most powerful antioxidants in nature, called xanthone, is found in the Mangosteen pericarp and also in the whole fruit. Xanthones are recognized for their medicinal potential, and proven benefit in certain diseases as well as providing a general health benefit, particularly on the cardiovascular system. They are also naturally antibiotic, antiviral, and anti-inflammatory. Mangosteen has an inhibitory action against the bacterial organisms such as Mycobacterium tuberculosis and Staphylococcus aureus. It has also gained a reputation for effective strengthening the immune system.

Its cultivation outside S.E. Asia generally has little success because of the trees' need of heat and water. In spite of that, many people have tried to plant Mangosteen in other places, such as California, Florida, North Queensland with a degree of success. Mature trees of about 10 years of age begin to yield from 500-1500 fruits. Fruit quality is destroyed with refrigeration and this presents problems with marketing and transport.

The Mangosteen fruit consist of 3 major parts.

The Pericarp - is the rind or peel and contains the highest level of xanthones.

The fruit pulp - is considered as one of the tastiest fruits in the world - commercially offered as a juice

The other known species of the genus also produce fruits that may have potentially similar properties but scientific tests have so far focused upon the popular "Queen of Fruits" or Purple Mangosteen to which the above information relates. Although other species offer fruits that are reported as edible, none deserve as much attention and appreciation as the one that is popularly known as the Mangosteen.

Other species however, may promise further rewards for those who persist in seeking to demonstrate the validity of traditional therapeutic claims such as the recent findings of the Purple Mangosteen in successful treatment of a wide range of difficult conditions such as autism and neurological diseases. Others offer avenues for possible discovery of other interesting properties-

1. gibbsiae Mountain Mangosteen of Australia from Atherton region is a tree with simple leaves and twigs that exude yellow latex. The fruits are to 60 mm with green flesh and are not edible. They contain clearly segmented 8 or 9 cells each containing a single seed has yellow waxy perfumed flowers and purple berries. It is attracting some attention by plant researchers.

2. hanburyii Gutta gamba, Gamboge from Thailand and Sri Lanka provides the official Gamboge, a bright yellow pigment esteemed by artists because it imparted a wonderful orange colour to their paintings. Also used as dye for yellow robes of Buddhist priests. Still mentioned in the U.S. Pharmacopoeia for use in dropsical conditions and to lower blood pressure where there is cerebral congestion but now greater caution is advised.It has a reputation as a drastic and sometimes dangerous cathartic.

3. indica Goa Butter, Kokam butters, produce an edible oil from seeds. The dried fruit rind is used in curries.

4. intermedia Lemon Drop Mangosteen has pleasant melting flesh and wrinkled skin. All species of mangosteen rind is used as a spice.

5. mestonii Native Mangosteen, Meston's Mangosteen from Queensland rainforests growing to 15m. Flowers are pink in terminal clusters. Large reddish purple large, edible fruits to 7 cm. It is related but cannot compare to the exotic mangosteen. It has not been developed in cultivation.

6. sessilis has an ornamental deep pink/red flower is adopted as the national flower of Tonga.

7. subellipticad Fukugi from Japan is held as the floral symbol of Mobuto and Tarama on Okinawa.

8. tinctoria - related to the mangosteen - and is reported to have a delicious fruit.

9. warrenii Native Mangosteen White, beautifully fragrant flowers followed by round purple fruit with sweet orange/brown edible flesh. Slow growing to 13m. It has been recommended for cultivation. Branches and leaves when bruised exude yellow latex. It is a large fruit to 60 mm occurring singly or in clusters and contains either 2-3 seeds. Found from Babinda to Cape York.

Most species in Garcinia are known for their resins or yellowish gums used as purgatives but recent research claims to have found hydroxycitric acid in the rind. Although toxic it suggests an appetite suppressant could be developed as medication in over indulged wealthy countries. There is considerable interest in the successful results of the whole fruit juice in treatment of autism and many other symptoms so evident now in our chemically toxic environment.

One might think that gummy fruit snacks are good for you since they're everywhere and contain many popular cartoon characters. the action of the enzyme 'amylase'. Proteins are converted into amino acids and amides. Fats
and oils are converted into more simple fatty acids by the action of the enzyme lipase.
During sprouting, the beans lose their objectionable gas producing quality. Research has shown
that oligosaccharides are responsible for gas formation. For maintenance of health, some
amount of gas production is necessary but it should be within safe limits. As the process of
germination ends and sprouting begins, the percentage of oligosaccharides is reduced by 90.
Sprouts contain a lot of fibre and water and, therefore, are helpful in overcoming constipation.

Sprouts are an extremely inexpensive method of obtaining a concentration of vitamins, minerals
and enzymes. They have in them all the constituent nutrients of fruits and vegetables and are
'live' foods. Eating sprouts is the safest and best way of getting the advantage of both fruits and
vegetables without contamination and harmful insecticides.

It should, however, be ensured that seeds and dried beans are purchased from a store where
they are fresh, unsprayed and packaged as food. Seeds that are packaged for planting purposes
may contain mercury compounds or other toxic chemicals.

Parts used: Fruits, leaves, seeds and bark.

Properties: Astingent, stomachic, diuretic (increases the amount of urine), anti-diabetic and anti-diarrhoeal.

Medicinal Uses

(a) In diabetes

The seeds are useful in diabetes. The fruit juice also has this property but the effect of preparations from seeds is more marked.

Aqueous extract of seeds produced marked fall in blood sugar in a single dose.

Jamun's vinegar is also useful in controlling diabetes. Regular use is recommended with both the meals.

Use of mixture prepared by mixing dried fruit of Karela (10g), Pterocarpus bark (10g) and Jamun seed (10g). After proper grinding take water extract of 2/3g of this powder to keep diabetes at bay.

(b) Other Uses

The bark is astringent and used in sore throats, indigestion, loss of appetite, leucorrhoea (A discharge of white from uterus and the vagina), bronchitis, asthma, ulcers and dysentry; it is also given for purifying blood, and" as gargle for spongy gum. The fresh juice of bark with goat's milk is given in diarrhoea. Ripe fruit can also check diarrhoea.

Doses

Juice - 50 to 100 ml

Bark Powder - 0.5 to 1.0 g

Seeds - 1.0 to 3.0 g

Dehydrating Food - The Old Fashioned Way

Instead of spending money on an expensive dehydrator, the old fashioned way of dehydrating food is easy and effective. Granted, electric dehydrators cut down on the time it takes to thoroughly dry food, but the dollar savings should more than make up for that. Besides, after preparing the food and setting it out to dry, there is nothing for you to do. Go about your life, come back in a few days, and pack up the dried food.

Homemade Fruit Leather

When my children were young, fruit leather(fruit roll-up in today's vernacular) was the "sweet" of the day, with apricots being the first choice of fruit. Just wash, cut in half, toss the pit away, add sugar to taste (or not), and throw the fruit into a blender. Add a little lemon juice to keep the leather from going dark as it dries. Cover a cookie sheet with plastic wrap and pour on the pureed fruit.

If it reaches the edges of the cookie sheet, stop pouring or it will be too thick. Get another cookie sheet for the rest. Cover the cookie sheet with cheese cloth to keep the flies out, using wooden spring-type clothes pins (or other type of clasp) to hold it taut so it doesn't touch the fruit puree. Put it out in the sun. If the wind is blowing, the drying time will be shorter.

Drying Vegetables


Tomatoes (I know, they're really a fruit) - Slice very thin and season with anything that sounds good to you - experiment with various spices. Lay out in a single layer on cookie sheets covered with cheese cloth. They almost taste like a candy treat when dried!
Green beans can be strung by using a needle and strong thread. Tie a knot in one end and push the needle through the center of the beans, pushing the beans towards the knot. When you get 2 or 3 feet of beans on the string, hang the beans up by the end in a warm dry area, but out of direct sunlight. Let them hang until the beans are dry. Store in a paper or cloth bag until ready for use.
Peas can be laid in the sun to dry. After they are dry, wait for a windy day. Place them on a sheet and beat the hulls off with a stick. The wind will blow the chaff away and leave just the peas. Store the peas in a paper or cloth bag until use.
Corn - cut the corn off the cob and lay in the sun until dry.

Most fruits and vegetables can be dried without any special instructions if you just use common sense. That means good sanitation practices. Don't dry any produce that is badly bruised or has any rot. Keep the food clean and protect it from insects during the drying process. Window screens can be used to make a box allowing airflow but protecting the fruits and vegetables from flies, etc.

I heard of an interesting method using your car - providing you don't need to drive it anywhere. Place the drying racks across the backs of the seats and just leave the windows slightly cracked. With the car sitting in the sun, the intense heat speeds up the drying process and gives some protection against insects and dirt.

Dehydrated fruits and vegetables can be stored in zip-lock bags for about a year. For longer term storage, put into #10 cans or glass bottles with oxygen absorbers.

Drink at least 8 glasses of water a day.
An alkaline diet with natural food is recommended. Wholegrain, fruits, nuts, vegetables, and dairy products form a good diet for the diabetic. Raw vegetables can be taken in high quantities. It has been found that cooked foods raise blood glucose higher than raw, unpeeled foods. Cooking destroys many of the enzymes and some vitamins and minerals.

Eat at least five fruits every day. Fruits like grape fruit, pomegranate juice, Indian blackberry, banana, granny smith apples, fig, cranberries, black berry, kiwi fruits, and citrus fruits are highly recommended. It can be taken as a snack. Cucumber, Lettuce, onion, garlic string beans cucumber radish, tomato, carrot, leaves; spinach turnip, cabbage and Jerusalem artichoke are good for diabetes. Colorful vegetables are good for the functioning of pancreas. Drink Fruit juices without sugar. Brewer's yeast and sprouted alfalfa and mung beans are good for the body. Unripe banana also can be cooked and eaten.

The most important of all is eating high fiber diet which lowers need for insulin. It releases energy into the body slowly. It has also been found that diabetes decreases and may even disappear in people eating a high fiber or whole food diet. High fiber diet has more chromium and chromium is very good for people with diabetes.
Eat lot of potassium rich foods like raw peanuts, tomato, bananas, melons, dried peas, potatoes, apple cider vinegar, skimmed milk powder, wheat but do not take potassium supplements.

Include soluble fiber in your meals like barley, oatmeal, almond meal, dried beans, kidney beans, cooked black beans, peas, cereals, chickpeas, Bengal gram which has low glycemic index, , Black gram, lentils and corn or garbanzo beans to helps considerably in reducing blood sugar levels. Soy products like tofu, tempeh, soymilk, soya powder, soy bean sprouts, nuggets etc are also very good in containing neurological complications in diabetes. You can make bread out of any of the whole grains. Get a lot of soluble fiber into your diet. When you eat lots of bread, cereal and starchy vegetables you will get enough of starches which is very helpful for diabetes. Insoluble fibers, found in bran (oat bran, wheat bran), whole grain breads, whole grains and nuts, act as intestinal scrubbers by cleaning out the lower gastrointestinal tract. Fiber cleans your intestinal tract by moving out the food so that it wouldn't stay there and putrefy. Butter milk and yoghurt diet are very beneficial.

Helpful herbs and vegetables

1. Bitter Gourd (Karela): Bitter gourd Momordica-charantia or bitter melon juice contains plant insulin and should be taken 2 ounce 2 times daily on an empty stomach. It is found to be very effective for diabetes.
Or
It can be cooked as any vegetable and eaten.
Or
The bitter melon powder can be made by drying. Take bitter gourd powder I teaspoon daily in empty stomach.

2. Taking half a teaspoon of cinnamon a day may help prevent the onset of diabetes. Even soaking a cinnamon sticks in your tea, could also benefit non-diabetics who have blood sugar problem but are unaware of it.

3. 30 gram fenugreek seeds can be soaked in a glass of water at night and after 12 hours take it and grind it into a paste with the soaked water and drink it on a empty stomach.
Or
2 teaspoon if powdered seeds can be taken with water or milk.
Or
You can add fenugreek into anything you cook.

4. Eating upto 3 grapefruits a day has also been helpful.

5. 1 tablespoon of amla (Emblica officinalis) after removing the seeds extract the juice and mix with a cup of bitter gourd juice and take daily for 2months in a empty stomach.

6. Gymnema Sylvestre a traditional ayurvedic herb the leaf of which is to be taken up to 4 grams per day.

7. Indian blackberry seeds or Jamun seed powder (scientific name of Jamun is Eugenia jambolana or Syzygium cumini L and) is very good for diabetes. Take 1/4th teaspoon with 1 teasoon honey for 50 days.

8. Eating freshly crushed raw garlic 3-4 grams a day lowers blood sugar. You can wash it down with a glass of water.

9. Neem seeds daily 2 times a pinch. Taking a gram of neem leaf daily helps in diabetes.

10. Bael (Aegle marmelos) : The leave of the bael tree when chewed are very useful in diabetes. Pulp of this fruit could be dried and taken in doses of 5 to 10 gms a day.

11. A pinch of pure turmeric powders mixed in amla juice (Indian goose berry) and eat daily in empty stomach.

12. Use of turmeric and gooseberry in equal quantities in powder form taken with warm water is very useful in this behalf. These activate the pancreatic cells and more insulin is produced.

13. Wild jeerakam cumin seeds black colored 60 gm in 1 liter and boil a reduce it ti 1/4th liter and take half divide it into two equal parts and drink one part in the morning and one in the evening 2 times daily.

14. Grind (Bacopa monnieri )Bhrahmi and add a teaspoon of it to milk and drink.

Vitamins that help

Supplements in natural forms are more conducive to the body.
Magnesium supplementation has been shown to improve insulin sensitivity.
Vitamin C: 500 mg is recommended. Vitamin E: This vitamin is very valuable for diabetes. A daily dose of 200 i.u. of Vitamin E is recommended for a fortnight at a time.
Chromium: Whole grains, seeds, mushrooms, corn oil and brewer's yeast are relatively good sources of biologically valuable chromium.
Vitamin A:. Take A dose of 15,000i.u. on alternate days.

Spicy Jambalaya

Ingredients:

3½-pounds Chicken breasts, grilled & chopped

2-teaspoons Salt

2-teaspoons Cayenne pepper

½-teaspoon Black pepper

2-tablespoons Oil

1-pound Pork sausage, cut into ¼ size pieces

1-teaspoon Liquid smoke

2-cups Onion, chopped

1-cup Celery, chopped

1-cup Green bell pepper, chopped

1-tablespoon Garlic, minced

½-teaspoon Basil, dried

½-teaspoon Thyme, dried

1-cup Tomatoes, diced

3-cups Rice

3½-cups Water

2-cups Chicken broth

Instructions:

Grill the chicken over medium heat for 10 to 15 minutes or until done, no pink in the thickest part. Heat oil in large heavy pot and cook sausage for about 2 minutes; add chicken, onion, celery, bell peppers, garlic and remaining spices. Cook stirring occasionally for about six minutes. Add the tomatoes, rice, water and chicken broth stirring well. Bring to a boil and reduce heat to medium-low, cover and simmer for about 30 minutes. Remove pot from heat and let set for 15 minutes covered before serving. This ensures that the rice absorbs the necessary liquid.

Serves 8 to 12

Three Easy Steps to Make Dried Fruit in Your Dehydrator

Fruity dehydration is easily the oldest method of preserving fruits. Prior to the advancement of modern technology, people used salt to preserve foods or they simply dried them in the sun. Today we have the aid of a food dehydrator to assist us in the drying of foods.

Fruit dehydration is rather a safe method, as it basically removed the moisture content from the fruit, so that mold and bacteria are not able to thrive on it.

Noted below are a few easy steps to making dried fruit in your dehydrator.

Step One:
All fruit should be washed, pitted and sliced prior to drying. Fruits should be sliced uniformly to ensure uniformity in the drying process. Once this is done, then fruit needs to be pre-treated to prevent darkening while being prepared for dehydration. Pre-treatments can be done either by blanching the fruits, or by dipping them in a solution of two tablespoon of ascorbic acid and one quart of water for five minutes. Pre-heat the dehydrator to 115 degrees Fahrenheit.

Step Two:
After preparing and pre-treating your fruit, then it is time to put them in the dehydrator. Place fruit on trays in a single layer. A variety of fruits may be dried simultaneously, though it is highly recommended that strong-smelling fruits be dried separately. Ensure that the pieces of fruit do not overlap or even top at all, as this may cause some parts of the fruit to not dry completely.

Once the fruits have been placed within the dehydrator, the temperature may fall somewhat. Bring the temperature back up to 115 degrees Fahrenheit. At the beginning of the process there is little danger of scorching the fruit, however, when the fruit is nearly dry this risk increases.

Step Three:
Inspect the fruit at half hour intervals. Rotation of the trays may be necessary to achieve uniform drying; the fruit may even need to be turned. Your manual should provide you with expected drying time, but expect the entire process to take anywhere between 8-12 hours. As you reach the end of the process, check fruits for dryness. This can be done by simply removing a slice, allowing it to cool and then feeling it with your fingers. Additionally, fruit could be cut in half and the outer edges checked for beads of moisture. If moisture is present, the fruit is not adequately dried.

Fruits which have been dried in a dehydrator need to be put through an additional process, prior to them being stored. They should be loosely packed in jars, and shaken daily for approximately seven days to ensure that the remaining moisture is evenly distributed between the dried pieces.

Cheesy Appetizers - Baked Brie Appetizer

So, Guests are coming and you want to bake some cheese. This is a good choice because most of your guests will like cheese. Serving baked Brie as an Appetizer is more about learning the simple technique than providing a standard recipe, although I will. If you learn how to simply bake brie, then you can take that skill, add to it a little love and imagination, and you could write a cookbook just on the variations of this modern classic.

Baking Brie involves:

Wrapping the Brie in a dough
Baking at about 350 degrees for 20 - 30 minutes, depending on the type of dough you use.
Cooling for about ten minutes
Serve with slices of toasted bread, slices of french bread or baguette,or crackers.

And you thought this would be tough. Now, on to variations.

The first variation and probably the most often served is BAKED BRIE WITH FRUIT AND NUTS. Here is how to make it.

First roll out your dough. Puff pastry is a good choice, as is a canned crescent roll product. You don't need to be too concerned with the shape of your dough at this point, only that it is large enough to completely cover the round of Brie that you will be baking in it.

Place your round of Brie, skin on, in the center of the pastry dough. You can now top the round with almost any fresh, frozen, canned,or jellied fruit. My mom loved apricot jam with the addition of a few dried apricots. I like raspberries so when available I use them fresh, or I use a raspberry whole berry jam. Be generous.

Now bring up the sides of your dough to cover your cheese and topping. You can fold the edges over and make a neat little package, but I like to gather the corners, pinching them together at the center, and letting the tails stick up. This will brown nicely if brushed with an egg wash and makes a delightful presentation if further garnished with a little of the fruit and some slivered almonds or other nut.

I like to use Filo dough because of the tender flaky crust it makes. Follow the same procedure except you must first prepare the crust. Be sure to keep the sheets of cough you aren't actually working with covered with a moist cloth when working. It will dry out within minutes. Lay out a sheet of Filo dough on a parchment covered cookie sheet. Brush it with melted butter. Lay another sheet on top and brush it with butter. Repeat this until you have built up several layers of dough. The more layers, the flakier it will be. When you have enough layers to suit you, you are ready to fill the dough with your brie and what-ever options you choose. Here are some more ideas for optional toppings. I have made all of these and they are all delicious.

APPLE PIE BRIE

Sprinkle every other sheet of Filo dough with about 1/2 teaspoon cinnamon and sugar mix. Cut the round of brie in 1/2, like you would a cake layer. Lay half on the prepared dough. Spoon a couple of teaspoons of apple pie filling over the cheese. Place the other half of the cheese on top and add more pie filling. Pull the dough up and gather around the wheel of cheeses. You want the corners to flair out at the top, sort of like a gift basket wrapper. Usually a gentle twist will hold it together, but you could always tie it loosely with kitchen twine, removing it just before serving. Bake at 350 degrees 15 - 20 minutes or until filo crust is golden brown. Cool ten minutes. sprinkle cinnamon and sugar mix over the top just before serving.

BRANDIED CHERRY BRIE - My mom's all time favorite. (Must be the brandy)

One hour before you are ready to bake your brie, place 1/2 cup of dried cherries in a small pot. Add 1 cup brandy. Heat slowly until the liquid just begins to boil. You do not want a hard boil, just a low simmering boil. Cook for 5 minutes then remove from heat and let cool. Drain, reserving the liquid.

Now prepare your dough. Crescent roll pastry is a good choice for this one as it is a little thicker and will hold more of the juices in. Layer your cheese with the drained cherries. Wrap as normal. Bake at 350 degrees until the crust is golden brown, about 20 minutes. While it is cooking, return the liquid from the cherries to the pot, adding water to make 1/2 cup. Using a whisk, stir in 1/2 teaspoon corn starch. Bring to a boil stirring constantly. Turn off the heat. Let cool slightly but it should be served warm. I put it in a small bowl on the platter with the brie and sliced baguette. Include a small spoon and your guests can dribble the warm, cherry gravy,over the brie.

You can use almost any dried fruit with this method, but you may want to change your liquor preferences.

MEAT AND CHEESE

You can also choose to serve your brie with a meat rather than fruit. Try wrapping the wheel with prosciutto.

You can also use slices of pepperoni, honey ham, salami, roast beef. Whichever meat you choose usually will be a nice mix. I use a little horseradish with the roast beef. I just spread the top of the cheese and then put the meat on. Try layering a couple of thin slices of smoked salmon a teaspoon of capers, and a few rings of raw onion for an unusual twist.
