How to Make Granola with your Kids

parentearth.com My daughter Pilar's kindergarten class asked that every student contribute a family recipe for a breakfast party. All of the recipes would then be included in a class book. We decided to make granola since it would be tasty and healthy. My kids love cereal for breakfast and so do I, but I don't like buying expensive processed cereal from the store. This granola recipe has protein from nuts, omega 3's from flax seeds and is low in sugar. We are a busy family so when we cook, we do it in bulk to last for many meals. Feel free to cut down this recipe and adjust it to your taste -- for example, sometimes I add a bit of salt. RECIPE Prep time: 10 minutes. Cooking time: 45 minutes Ingredients: 8 cups organic oats 4 cups organic puffed brown rice 1 cup chopped nuts like walnuts, almonds, pecans (you can add more nuts for more protein if you wish) ¼ cup flax seeds ½ cup organic canola oil or olive oil 1 cup maple syrup or honey 1 teaspoon real vanilla 1 teaspoon cinnamon (adds sweetness without sugar) ½ cup dried unsweetened coconut 1 cup raisins 1 cup shelled sunflower seeds or pumpkin seeds Preheat oven to 400 degrees. In a large mixing bowl, combine ingredients and mix well. My kids love to help mix. For an easy clean up, place parchment paper over 3 to 4 cooking sheets. Spread out the granola mixture.
