Egg, Butter and Guilt Free Fruit Cake

This is a really simple cake the kids could easily make by themselves (with just a little help from you with preheating the cooker and getting the cake in and out). It's a great recipe to use if you have run out of eggs and butter as can sometimes be the case just before shopping day! The processed bran makes it healthy too.

For a sweeter alternative, try icing the cake with simple butter icing.**

INGREDIENTS


1 CUP MIXED DRIED FRUIT*
1 CUP PROCESSED BRAN CEREAL (ALL-BRAN)
1/2 CUP BROWN SUGAR
1 1/4 CUPS MILK
1 CUP SELF RAISING FLOUR

Place the bran, fruit, sugar and milk into a large mixing bowl and leave to stand for approx 1 hour. The bran expands during this time - this is perfectly normal.

Preheat oven to 180 degrees C (350 degrees F).

Add the sifted flour to the fruit, bran, milk and sugar mixture and mix in well.

Line and grease 500g (1 lb) loaf tin (or grease with butter and sprinkle just a little flour into tin and swish around until tin is coated in flour).

Put mixture into prepared tin.

Bake for approx 55 to 60 minutes.

Turn out onto a cooling rack.

Slice and serve either spread with butter or on its own.

* The mixed dried fruit can be replaced with the same quantity of sultanas or dried prunes if preferred.

** To make butter icing:

To approx 3/4 cup of sifted icing sugar add 1 teaspoon butter and mix in enough water to make spreadable icing (approx 2 tablespoons).
