Spicy Jambalaya

Ingredients:

3½-pounds Chicken breasts, grilled & chopped

2-teaspoons Salt

2-teaspoons Cayenne pepper

½-teaspoon Black pepper

2-tablespoons Oil

1-pound Pork sausage, cut into ¼ size pieces

1-teaspoon Liquid smoke

2-cups Onion, chopped

1-cup Celery, chopped

1-cup Green bell pepper, chopped

1-tablespoon Garlic, minced

½-teaspoon Basil, dried

½-teaspoon Thyme, dried

1-cup Tomatoes, diced

3-cups Rice

3½-cups Water

2-cups Chicken broth

Instructions:

Grill the chicken over medium heat for 10 to 15 minutes or until done, no pink in the thickest part. Heat oil in large heavy pot and cook sausage for about 2 minutes; add chicken, onion, celery, bell peppers, garlic and remaining spices. Cook stirring occasionally for about six minutes. Add the tomatoes, rice, water and chicken broth stirring well. Bring to a boil and reduce heat to medium-low, cover and simmer for about 30 minutes. Remove pot from heat and let set for 15 minutes covered before serving. This ensures that the rice absorbs the necessary liquid.
